The method for producing the L-amino acid involves using a histidine ammonia lyase derived from microorganisms and animals and having the activity of optically selectively adding amino groups to various acrylic acid derivatives other than of making a reaction of giving histidine from urocanic acid as known conventionally. 微生物、および動物由来のヒスチジンアンモニアリアーゼに、従来知られる、ウロカニン酸よりヒスチジンを与える反応以外に、様々なアクリル酸誘導体に対し光学選択的にアミノ基を付加する活性があり、該ヒスチジンアンアンモニアリアーゼを用いることにより、上記課題を解決可能となった。 - 特許庁
