Borrowed from German and Dutch Giesen, patronymic from Gies, Giese.
Also as a German surname, from the placename Giessen in Hesse, or other similar-sounding places, from a castle name Middle High German ze dën gieȥen (“on the streams”) (see modern gie ß en (“to pour”)).
