From New Latin acidum pyruvicum, from Ancient Greek πῦρ (pûr, “fire”) + ūva (“grape”) + -icum (neuter singular of -icus), from its being produced by the dry distillation of racemic acid, originally derived from grapes. By surface analysis, pyr(e) + Latin uv(a) + -ic.

Pyruvic acid (CH3COCOOH) is an organic acid, a ketone, as well as the simplest of the alpha-keto acids. The carboxylate (COOH) ion (anion) of pyruvic acid, CH3COCOO−, is known as pyruvate, and is a key intersection in several metabolic pathways.
