An alcoholic beverage made from apple juice or cider. Apple juice is allowed to ferment with a selected yeast. Sometimes sugar is added. Fermentation time can range from one month to several months depending on the temperature of the area that the juice is fermenting in. Juice is then racked once the ferment stops or slows. The wine maker makes this determination depending on the flavor of the wine at that time. The wine then clears by settling. This can take up to a month, as the temperature must be cold to allow settling. Otherwise fermentation will continue. Once the wine settles it is clear bright yellow or golden color and can then be bottled. Alcohol content ranges between 10-18% depending on the yeast used during fermentation.
