1. A machine used to extract the blood and bone marrow from a duck for use in pressed duck.

     Cut off the breast carefully from four snipe, put the frames in a duck press with a clove of garlic, two cloves, three whole pepper corns and a sprig of parsley, turn the screw and obtain all the juice possible.
