Taboon bread is a flatbread eaten in the Middle East. It is traditionally baked in a taboon oven (Arabic: خبز طابون‎: bread of the taboon, Hebrew: לאפה‎: la-fah, Hebrew: פיתה עירקית‎: Iraqi pita, in Jerusalem: Hebrew: אַשתנוּר‎ ash-tanur) and spread with various toppings or filled and used as a wrapper. It is sold as street food, stuffed with hummus, falafel or shaved meat. Taboon bread is a staple of Middle Eastern cuisine worldwide. In Jerusalem and the northern West bank, taboon bread is the main component of the dinner dish called musakhan (Arabic: مسخّن‎). It is composed of roasted chicken baked with onions, sumac, allspice, and saffron atop taboon bread.
