Shavfka (sha-ve-k-ah) is a Kugel Fritata from Istanbul (formerly known as Constantinople). Traditionally, it is a Jewish dish served on Shabbat. It is made primarily of a single vegetable (commonly either cauliflower, broccoli, spinach or mushrooms), eggs and seasonings. It contains an extremely limited amount of carbohydrates. Although some make the dish with potatoes, this does not fit in with the traditional definition of the dish. It is loose in consistency yet ripe with flavors. Typically a specialties of Bubbies (Grandmothers), this recipe is of Sephardic Jewish lineage. Delicious and nutritious, Shafvka is easy to make and purely cost efficient. Can feed up to 15 in one serving and was used during hardships in Constantinople to feed the hungry troops as they bulked up for war.
