From German Enzym, coined 1878 by the German physiologist Wilhelm Kühne from Ancient Greek ἐν (en, “in”) + ζύμη (zúmē, “leaven”). By surface analysis, en- + zyme.
enzyme (countable and uncountable, plural enzymes)
Before 1980, protein enzymes were the only known type, so the word enzyme invariably meant that type. Since RNA catalysis was discovered, ribozymes are often viewed as a type of enzyme (in the newer and broader sense of the word), but even today, their name is often used coordinately with the stricter sense.

Enzymes (pronounced /ˈɛnzaɪmz/) are proteins that catalyze (i.e., increase the rates of) chemical reactions. In enzymatic reactions, the molecules at the beginning of the process are called substrates, and they are converted into different molecules, called the products. Almost all processes in a biological cell need enzymes to occur at significant rates. Since enzymes are selective for their substrates and speed up only a few reactions from among many possibilities, the set of enzymes made in a cell determines which metabolic pathways occur in that cell.
