From Guinea, the early modern name for West Africa, the coins originally being made of gold from the region, mostly from the 'Gold Coast' (modern Ghana) and used for African trade, and the guinea fowl being found there.
Its use as an ethnic slur against Italians may be due to their darker complexion compared to people of Anglo-American descent.
guinea (plural guineas)

Guinea (
i/ˈɡɪni/), officially the Republic of Guinea (French: République de Guinée), is a country in West Africa. Formerly known as French Guinea (Guinée française), it is today sometimes called Guinea-Conakry to distinguish it from its neighbour Guinea-Bissau. Guinea is divided into seven administrative regions and subdivided into thirty-three prefectures. Conakry is the capital, largest city and economic center. The other major cities in the country include Labe, Nzérékoré, Kankan, Kindia, Mamou, Boke, and Guéckédou.
