From mid-17th century. Borrowed from Spanish barbacoa, from Taíno barbakoa (“framework of sticks”), the raised wooden structure the natives used to either sleep on or cure meat. Originally “meal of roasted meat or fish”. Doublet of balbacua and barbacoa.

Barbecue or barbeque (common spelling variant) (with abbreviations BBQ & Bar-B-Q; Barbie, used chiefly in the United Kingdom and Australia; Braai used in South Africa) is a method and apparatus for cooking meat, poultry and occasionally fish with the heat and hot smoke of a fire, smoking wood, or hot coals of charcoal.
