From 中期英語 starche, sterche, from 古期英語 *stierċe (“stiffness, rigidity, strength”), from Proto-West Germanic *starkī (“stiffness, rigidity, fortitude, strength”), ultimately from Proto-Indo-European *sterg- (“stiff, rigid”).
Cognate with dialectal Dutch sterk (“strong”), Middle Low German sterke (“strength”), German Stärke (“strength", also "starch”), Swedish stärkelse (“starch”), Icelandic sterkja (“starch”). Related to English stark (“stiff, strong, vigorous, powerful”).

Starch or amylum is a carbohydrate consisting of a large number of glucose units joined together by glycosidic bonds. This polysaccharide is produced by all green plants as an energy store. It is the most common carbohydrate in the human diet and is contained in large amounts in such staple foods as potatoes, wheat, maize (corn), rice, and cassava.
